CATFISH RECIPES LIST

The following is a selected list of catfish recipes. Since everyone's taste varies, you will like some better than others. As for me, if it has catfish in it, I like it.

Note, Pan Frying: For pan frying, you can use the skillet or your choice, but I recommend a cast iron skillet. Once you get used to cooking in a cast iron skillet, you will not want to fry in anything else. You get such a consistent heat with cast iron. Bring the heat up slowly, so you do not over run your cooking temperature, and you will be amazed at the heat control that you have.


OVEN FRIED CATFISH: A baked catfish with a crispy fried taste

2 large catfish fillets cut in half

Half cup white cornmeal

1 tsp lemon pepper

0.5 tsp cayenne pepper

0.5 tsp black pepper

1.5 tsp dried basil

0.5 tsp garlic powder

0.5 cup flour

1 egg white

0.5 cup lime juice

Thoroughly mix cornmeal, peppers, basil and garlic powder and place in a flat bowl. Place flour in a flat bowl. Combine egg white and lime juice and whisk until mixed. Place egg and lime mixture in a flat bowl. Lightly grease a baking sheet. Heat oven to 400 degrees. Wash and drain fillets. Roll fillets in flour and shake of excess. Dip and turn fillets in egg white mixture and drain for excess. Roll fillets in cornmeal mixture and place on greased baking sheet. Bake for 5 minutes and turn fillets over. Bake for another 5 minutes. Cooking time may be adjusted for thickness of fillets and heat of oven. Fillets should be golden brown and crisp. Serve with lemon slices and/or with garnish of choice.


FRIED CATFISH RECIPE, Simple old time, home style:

2 lb catfish fillets

1 cup yellow corn meal

1 tsp black pepper

2 tsp salt

Cooking Oil

Mix corn meal, pepper and salt in a paper or plastic bag. Shake until thoroughly mixed. Wash and drain fillets. Heat oil in skillet to cooking temperature (medium high). Place fillets in bag and shake gently until thoroughly covered with corn meal mixture. Place fillets in skillet and cook approximately 2 to 3 minutes on each side (until golden brown and cooked through). Cooking time depends on thickness of fillets.


QUICK CAJUN CATFISH RECIPE, Simple frying with a Cajun twist:

Serving size catfish fillets (number as needed)

Creole seasoning

Cooking oil (olive oil or peanut oil)

Wash catfish fillets and pat dry with a paper towel. Cover bottom of skillet with thin layer of cooking oil and heat to a medium heat. Sprinkle both sides of fillets amply with Creole seasoning. Place in hot skillet and cook for 3 minutes on each side. Adjust cooking time for thickness of fillets (until just cooked through).
